Fall is my favorite season. Not too hot, not too cold. Holidays around the corner. And best part, pumkin! I love pumpkin anything. Pumpkin soup, muffins, and pancakes, of course!
This is the time of year I switch up the morning breakfast routine. For weekends, I shared my recipe for Easy Pumpkin Pancakes from scratch. If you’re in a bit of hurry, here’s my cheat recipe for pumpkin pancakes using Bisquick. Perfect for a busy school morning and honestly, just as yummy.
Pair your Pumpkin Pancakes with maple flavored bacon, top it with maple syrup, and don’t forget that tall PSL!
Semi-homemade Pumpkin Pancakes Recipe
- 1 1/2 cups 2% milk (or skim)
- 1/2 cup pumpkin puree
- 1 egg (or whites of two eggs)
- 1 teaspoon of vanilla
- 2 cups Bisquick
- 1 teaspoon ground cinnamon
- Mix dry ingredients first, then add wet ingredients. Blend until smooth.
- Heat skillet and grease with butter or fat free cooking spray. Leave on low heat.
- Scoop batter onto skillet, wait until pancakes starts to rise and bubble, then flip for another 1-2 minutes.
- Enjoy!
