Recipe: Bacon Wrapped Sweet Plantains

I love plantains. Sweet or fried, I grew up eating these almost once a week.  In Haiti, fried plantains are a snack.  In Mexico, plantains are served either sweet or fried with a meal. My mom made them usually as a side dish when she made mole or any traditional Mexican food.

There are so many ways to enjoy plantains. Start first with how ripe the plantain is before they are cooked. Plantains are either yellow, green, or yellow with dark spots.  Each stage offers a different flavor. Green and yellow plantains are usually double fried then sprinkled with salt.  Yellow can also be sliced then baked.  But the dark spotted plantains, called Maduros, are really sweet and soft. Sometimes gooey.  Maduros can be sliced round and double fried. Sweet plantains can also be sliced long, then baked and sprinkled with cinnamon for a delish side dish.The darker the sweeter.

And since everything tastes better with bacon, so do plantains. There’s nothing like bacon wrapped plantains.  For this dish, you have to use the dark spotted plantains. This gives you a sweet and savory dish that is sooo yummy.  They are perfect for any occasion, of course. A cocktail party, tailgate, game night snack.

For this recipe I used Farmland® Bacon. As with any dish, choose quality ingredients for best flavor. Farmland® cures and smokes their bacon for a tasty difference you’ll notice in every delicious bite.

Ingredients

  1. Half pound Farmland® Bacon
  2. Two dark spotted plantains, peeled and sliced long
  3. Olive Oil
  4. Salt
  5. Maple Syrup, optional

Directions

  1. Cut the tips off the plantains, the slice the skin down the middle from the inside. Careful not to pierce the plantain. Peel skin off. Slice plantain long, about 1 1/2 inches.
  2. Fry the plantains in a little EEOV for about 2 minutes each side until it browns slightly. (I like to cook the plantain a little bit first, then I wrap it with the bacon and fry it again.)
  3. Meanwhile, cut one bacon slice in half.  Carefully remove the plantain. Wrap half slice around the plantain, pan fry low another 2 minutes, or until bacon is cooked. Use a toothpick if you want to.
  4.  Once bacon is browned, remove and place on paper towel. Sprinkle with salt or drizzle with maple syrup.
  5. Buen provecho!
