Gluten Free Pumpkin WafflesIt’s pumpkin season. Oh, how I love pumpkin soup, pumpkin spiced lattes, pumpkin pancakes, and of course, pumpkin waffles. Pumpkin waffles are perfect this time of the year. The leaves are changing, the weather is cooling down.  We’re all gearing up for holiday brunches and parties, family in town and everything that makes us love this time of the year.

These pumpkin waffles remind me of everything fall. For this recipe, I used gluten free Kodiak Cakes mix so that the whole family could enjoy the waffles. (My youngest son has a wheat allergy.) However, if you don’t want to make your pumpkin waffles gluten free, swap out Kodiak Cakes mix with your favorite pancake or waffle mix. Just be sure to follow the milk to mix ratio accordingly so that your waffles are not too thin or thick.

Forget that these are gluten free waffles for just second because they are delicious! So good. I topped the pumpkin waffles off with caramelized pecans. Bananas mixed in with the pecans would have been tasty too.  If you like, skip the topping and just go with maple syrup. And as you go for your second and third waffle, remember that pumpkin is an excellent source of vitamin A and fiber. That means these are healthy waffles, people. Enjoy them guilt free, kinda sorta…

Serves 4

Ingredients

Gluten Free Pumpkin Waffles:

2 Cups of Zodiac Cakes Gluten Free mix
1 1/4 cup of milk
1/2 cup of canned 100% pure pumpkin
1 egg
1/2 teaspoon of vanilla
1/4 teaspoon of ground allspice
1/4 teaspoon of nutmeg
1/4 teaspoon of cinnamon
dash of salt
1 tablespoon of oil
butter

Candied Pecans

2 tablespoons of butter
1/4 cup of pecans, broken up slightly
2 tablespoons of brown sugar
cinnamon and sugar

Directions

Pumpkin Waffles
1. Combine all your dry ingredients (mix and spices).
2. Combine all wet ingredients with dry ingredients.
3. Mix until smooth.
4. Put a pat of butter on the waffle iron and pour about 1/2 cup of batter to make one waffle.
5. Close iron and wait about 5-7 minutes depending on temperature of your iron.
6. Remove each waffle with a fork.

Candied Pecans
1. Melt butter into pan. Bring to a boil.
2. Meanwhile, place pecans on wax paper, cover, and crush slightly.
3. Pour pecans into boiling butter. Lower heat to and mix constantly.
4. Add sugar, continue mixing for about 3-5 minutes or until pecans look darker.
5. Allow to cool on wax paper.

Pour candied pecans over hot waffles. Top off with powdered sugar if you wish. Enjoy!
